Lemon Zang Chicken and Orzo

Lemon Zang chicken and orzo pasta is the perfect weeknight, hearty, one-pot meal. It is just enough to cure your need for starch without killing you on the calories. The Coastal Badass Lemon Zang sets this dish off by and keeps it tasting lighter than your usual one pot.

Ingredients:
2 lbs chicken tenderloins
1 TBSP olive oil
1/2 medium onion, chopped
3 cloves garlic minced
1 cup white mushrooms
1 bunch of chopped asparagus
1 tsp Italian Seasoning
1 1/2 cups orzo pasta (whole wheat)
3 TBSP lemon juice
3 cups chicken broth
1 1/2 cups heavy cream
3/4 cup freshly grated parmesan
2 cups fresh baby spinach
salt and pepper to taste

Heat oil in a cast iron skillet. Coat chicken breasts with Coastal Badass Lemon Zang seasoning and place in the pan.
Cook chicken on both sides until done. Chop into smaller pieces.
Add oil, butter, onion, mushrooms, and asparagus to a pot over medium - high heat. Saute for about 4 minutes.
Add the garlic, Italian seasoning, and orzo. Cook for 3 minutes, stirring often to get the orzo to infuse the flavor and toast it.
Stir in the chicken broth, lemon juice, and heavy cream. Once it starts to bubble, continue cooking for 10 minutes uncovered and stirring often. May have to turn the heat down a little bit.
Stir in the chicken and lemon zest.
Take the pot off of the heat and stir in the parmesan and spinach. Cover with a lid and let it sit for 3 - 5 minutes. Season as needed and serve immediately.
* I like to sprinkle a little bit of Lemon Zang on the top at the end
